  1. Nectarine and Blueberry Coffee Cake

    “Gluten-free flour contains a lot of high GI (glycemic index) rice flour, and it causes a rapid blood sugar spike. This is not ideal for people who want to lose weight or prevent/control diabetes, so I used coconut flour and almond flour instead, both of which have a lower GI. Instead of nectarines, you can also use other stone fruits, peaches, plums and apricots. The recipe has a vegan option.”
